Who doesn’t love an easy traybake? Minimal wash up and this recipe takes just 30 minutes in total, Cauliflower Bites with roasted veggies and pesto chicken.A healthier alternative to your classic carbs, our Cauliflower Bites count as 1 of your 5 a day. They are also low in sugar, are a source of fibre and contain no artificial colours, flavours and preservatives.


1 bag Green Isle Cauliflower Bites

1 teaspoon olive oil

1 large courgette, cut into small chunks

100 grams cherry tomatoes

1 red onion, cut into small chunks

1 small leek, sliced into 1 cm slices

Salt and freshly ground black pepper

8 chicken mini fillets

2 tablespoons pesto


  1. Preheat the oven to 200 C / 180 C fan .
  2. Grab the largest roasting tin you can find and place the Green Isle Cauliflower Bites down one side of the tray. Roast for 10 minutes.
  3. In a bowl, toss the courgette, cherry tomatoes, red onion and leeks with the olive oil and a good pinch of salt and pepper. In a separate bowl toss the chicken mini fillets with the pesto and set both bowls aside.
  4. After the Cauliflower Bites have had their 10 minutes remove from the oven and place the vegetables down the middle of the tray, keeping everything separate. Put the pesto chicken on the other side of the vegetables and then return the tray to the oven for 15 - 20 minutes until everything is cooked through.
