Loaded Cauliflower Mash


400 grams Green Isle Cauliflower Mash

2 tablespoons chives, finely chopped

4 chestnut mushrooms, sliced

1 tablespoon butter

75 grams mozzarella, grated

50 grams red cheddar, grated

2 spring onions, finely sliced

Salt and pepper


  1. Microwave the Green Isle Cauliflower Mash according to the packet instructions, stir through the chives and then place into a small ovenproof dish.
  2. Preheat the grill to high.
  3. Place a frying pan over a medium-high heat and when hot, add the mushrooms. Cook for 3 – 4 minutes then add the butter and season wel with salt and pepper.
  4. Spoon the mushrooms on top of the Cauliflower Mash and then sprinkle over the cheddar and mozzarella. Crack over a little black pepper then place underneath the grill for a few minutes until the cheese is golden and bubbling.
  5. Serve immediately sprinkled with the chopped spring onions.
  6. This dish is great served as a BBQ side.
