Loaded Cauliflower Mash

Ingredients
400 grams Green Isle Cauliflower Mash
2 tablespoons chives, finely chopped
4 chestnut mushrooms, sliced
1 tablespoon butter
75 grams mozzarella, grated
50 grams red cheddar, grated
2 spring onions, finely sliced
Salt and pepper
Method:
- Microwave the Green Isle Cauliflower Mash according to the packet instructions, stir through the chives and then place into a small ovenproof dish.
- Preheat the grill to high.
- Place a frying pan over a medium-high heat and when hot, add the mushrooms. Cook for 3 – 4 minutes then add the butter and season wel with salt and pepper.
- Spoon the mushrooms on top of the Cauliflower Mash and then sprinkle over the cheddar and mozzarella. Crack over a little black pepper then place underneath the grill for a few minutes until the cheese is golden and bubbling.
- Serve immediately sprinkled with the chopped spring onions.
- This dish is great served as a BBQ side.
