Mexican loaded Cauliflower Fries
Switch up your loaded fries with our Cauliflower Fries, Mexican style. Loaded with pico de gallo, black beans and guacamole, a tasty alternative to nachos.

Ingredients
300 grams Green Isle Cauliflower Fries
For the pico de gallo
100 grams cherry tomatoes, quartered
½ red onion, finely chopped
A large handful coriander, chopped
Juice of half a lime
For the guacamole
2 avocados
Juice of a lime
Salt and black pepper
Coriander, to serve
Method:
- Pre-heat oven to 220 C / 200 C fan / Gas Mark 6. Place the Green Isle Cauliflower Fries in a single layer on a baking tray. Cook for 10 to 14 minutes, turning once.
- While the fries are cooking, make the pico de gallo by mixing together the chopped tomatoes, red onion, coriander, lime juice and a pinch of salt and set aside.
- Make the guacamole by mashing the avocado together with the lime juice and salt.
- When the fries are cooked, serve topped with the guacamole and pico de gallo and sprinkle everything with some coriander.
