Mexican loaded Cauliflower Fries

Switch up your loaded fries with our Cauliflower Fries, Mexican style. Loaded with pico de gallo, black beans and guacamole, a tasty alternative to nachos.


300 grams Green Isle Cauliflower Fries

For the pico de gallo

100 grams cherry tomatoes, quartered

½ red onion, finely chopped

A large handful coriander, chopped

Juice of half a lime

For the guacamole

2 avocados

Juice of a lime

Salt and black pepper

Coriander, to serve


  1. Pre-heat oven to 220 C / 200 C fan / Gas Mark 6. Place the Green Isle Cauliflower Fries in a single layer on a baking tray. Cook for 10 to 14 minutes, turning once.
  2. While the fries are cooking, make the pico de gallo by mixing together the chopped tomatoes, red onion, coriander, lime juice and a pinch of salt and set aside.
  3. Make the guacamole by mashing the avocado together with the lime juice and salt.
  4. When the fries are cooked, serve topped with the guacamole and pico de gallo and sprinkle everything with some coriander.
