Protein Thai Green Curry
Midweek meals are made easy with another great recipe from Claire Marie (@clairemariecuisine), enjoy this easy Thai green curry with our Protein Stir Fry Mix. With just a few simple ingredients and minimal prep, you can have this tasty recipe whipped up for all the family.

Ingredients
1 pack Green isle Protein stir fry mix
1 small jar Thai green curry (95g)
1 tbsp coconut oil
1 can coconut milk (400ml)
1 onion
2 garlic cloves
2 chicken breasts
1 chili (optional)
1 small handful of peanuts
Method:
- Start by chopping the onion and crush the garlic. Heat up a large pan with some coconut oil. Chop the chili if using and add to the pan. Slice the chicken breasts and add to the mix.
- Scoop in the small jar of curry ; you can add a small amount of water to rinse the end avoid any waste!
- Finally add the coconut milk. Cook for 5 minutes on gentle heat.
- Then pour in the Protein Stir Fry Mix bag and cook for a further 10 minutes.
- Just before serving, sprinkle with a handful of peanuts. Serve with rice or noodles.
