Protein Thai Green Curry

Midweek meals are made easy with another great recipe from Claire Marie (@clairemariecuisine), enjoy this easy Thai green curry with our Protein Stir Fry Mix. With just a few simple ingredients and minimal prep, you can have this tasty recipe whipped up for all the family.


1 pack Green isle Protein stir fry mix
1 small jar Thai green curry (95g)
1 tbsp coconut oil
1 can coconut milk (400ml)
1 onion
2 garlic cloves
2 chicken breasts
1 chili (optional)
1 small handful of peanuts


  1. Start by chopping the onion and crush the garlic. Heat up a large pan with some coconut oil. Chop the chili if using and add to the pan. Slice the chicken breasts and add to the mix.
  2. Scoop in the small jar of curry ; you can add a small amount of water to rinse the end avoid any waste!
  3. Finally add the coconut milk. Cook for 5 minutes on gentle heat.
  4. Then pour in the Protein Stir Fry Mix bag and cook for a further 10 minutes.
  5. Just before serving, sprinkle with a handful of peanuts. Serve with rice or noodles.
