Sweet Potato & Cauliflower Mash Quesadillas

Trying to plan what you’re going to have for lunch tomorrow? Or maybe you fancy a late night snack. Our Sweet Potato, Cauliflower & black bean quesadillas, filled with lots of melted cheese are ready in minutes when cooked on a griddle pan or toasted under the grill. Our NEW Sweet Potato and Cauliflower Mash make this recipe a quick and tasty way to help you get your 5 a day. Best served with some guacamole, lime and a hot sauce of your choice

Ingredients

2 x 190 gram packets Green Isle Sweet Potato & Cauliflower Mash

1 x 400 gram tin of black beans, drained

50 grams white cheddar, grated

50 grams mozzarella, grated

1 tablespoon chipotle hot sauce

1 teaspoon ground cumin

2 spring onions, thinly sliced

4 medium flour tortillas

Salt and black pepper

To serve

Guacamole (store bought or mash 2 avocados, one small onion, a ripe chopped tomato, lime juice, crushed clove of garlic and salt and pepper to taste)

Method:  

  1. Place the Green Isle Sweet Potato & Cauliflower Mash into a non-stick pan set over a medium heat. Cook, stirring regularly for 5-7 minutes until piping hot. Then transfer to a bowl.
  2. Add the drained black beans, cheeses, hot sauce, cumin and spring onions and season with salt and black pepper then roughly mash everything together with a potato masher. You want some of the beans to break down and some to remain whole so just mash enough to achieve this texture.
  3. Divide the mixture between 4 tortillas, spreading it out over only half of the tortilla and then fold the other half of the tortilla over to create a half moon shape.
  4. Place a large frying pan over a medium heat and add 2 of the quesadillas – or as many as your pan can fit, and cook for 3 minutes each side until the cheese is melted and the outside is golden brown.
  5. Keep warm whilst you cook the remaining quesadillas then serve, cut in half with some guacamole, coriander and more sauce if you like.
