Sweet Potato, Coconut and Red Chilli Soup

Ingredients
1 tablespoon olive oil
1 onion, roughly chopped
2 cloves garlic, roughly chopped
1 bag Green Isle sweet potato & cauliflower mash
1 large carrot, peeled and roughly chopped
50 grams red lentils
1.2 litres vegetable stock
To serve
Dried red chilli flakes
Yoghurt
Coriander leaves, to serve
salt and freshly ground black pepper
Method: Method
- Heat the oil in a large, lidded saucepan over a medium-high heat. Add the onion and garlic and cook until softened.
- Add the Green Isle Sweet Potato and Cauliflower Mash, carrots, lentils and stock and bring to the boil. Reduce the heat to low and simmer for 15 minutes.
- Remove the pan from the heat and blend the soup, using a stick blender, until smooth. Alternatively, tip it into a food processor and blend. Season to taste and serve.
