Teriyaki Salmon
with Cauliflower Rice + Sweet Potato,
Quinoa, Peas and Lentils

Ingredients
1 bag (320g) Green Isle Cauliflower Rice + Sweet Potato, Quinoa, Peas and Lentils
2 darnes of fresh salmon
4 tablespoons of soy sauce
2 tablespoons of honey
1 small clove of garlic, finely chopped (optional)
Method
Mix the soy sauce, honey and garlic together in a small bowl.
Place the salmon in a dish and add half the marinade.
Turn the fish in the mixture and allow sit for at least 10 minutes for the flavours to be absorbed.
Preheat your oven to 200⁰C/gas 6.
Place the salmon on a lined baking sheet and bake for 10-12 minutes. Reduce the remaining marinade in a small pot until sticky and spoon over the cooked salmon.
