Mini Corn On The Cob

Grilled Corn, Feta, Chilli & Basil Salsa


1 x bag Green Isle Corn on the Cob

2 tablespoons grapeseed oil

1 tablespoon unsalted butter

150 grams feta, crumbled

½ red onion, finely diced

1 red chilli, finely diced

1 bunch basil, roughly torn

2 tablespoons olive oil

Juice of ½ a lime

Salt and freshly ground black pepper


  1. Cook Corn on the Cob, drain and remove the kernels.
  2. Toast kernels in a pan until golden then remove.
  3. Mix with feta, diced red onion, chopped chilli, torn basil, salt, pepper, olive oil and lime juice.
  4. Serve immediately and enjoy!
