Steak frites with Straight Cut Chips

Steak frites is a simple dish of beef steak alongside your favourite chips, popular in Belgium and France. Our recipe saves you time using Green Isle Straight Cut Chips and the tasty and crunchy coating will guarantee your chips are crispy, golden and delicious. Ingredients

2 Rib eye steaks, removed from fridge 30 minutes before cooking

200 grams Green Isle Straight Cut Chips

Vegetable oil, for cooking

Salt and freshly ground black pepper

For the garlic butter:

100 grams butter

1 tablespoon Parsley, finely chopped

1 clove Garlic, grated

Rocket, to serve

Method:  

  1. Begin by making the garlic butter, in a small bowl mix together the butter, parsley, garlic and a pinch of salt and pepper. Combine well then place a piece of cling film on a surface and spoon the butter into the center. Roll the clingfilm up and around the butter and twist up the sides, to form a cylinder of butter. Place into the fridge to firm up.
  2. Preheat oven to 200 C / 180 C fan. Cook the Green Isle straight cut chips for 20 - 25 minutes until cooked through.
  3. To cook the steak, rub a small amount of vegetable oil into each steak and season well with salt and pepper. Heat a pan over a high heat and when very hot, add the steak. Cook for 3-4 minutes each side, or until done to your liking then add a slice of the garlic butter. Cook for a further minute then remove the steaks from the pan and allow to rest for at least 5 minutes.
  4. When the chips are ready, serve with the steaks, some rocket and extra garlic butter.
