- 40 minutes
- 2 people
Ingredients
- 100g Unsalted Butter, at room temperature
- 6 Garlic Cloves, finely grated
- 1 tbsp Flat Leaf Parsley, finely chopped
- Salt & Freshly Ground Black Pepper
- 2 Chicken Breasts
- 100g Plain Flour
- 1 tsp Garlic Powder
- 2 Eggs, beaten
- 200g Panko Breadcrumbs
- 250g Green Isle Straight Cut Chips
- 125g Green Isle Garden Peas
- Low Calorie Oil Spray
Method:
- Make the garlic butter: Add butter, garlic, parsley, salt, and pepper to a blender and blitz until smooth. Spoon onto cling film, roll into a sausage shape, and chill for at least 2 hours (or overnight).
- Prep the chicken: Butterfly each chicken breast and open it out. Slice the chilled butter into 8 discs. Place 2 discs in the centre of each breast, then fold over to seal.
- Coat the Kievs: Set up three bowls — one with seasoned flour and garlic powder, one with beaten eggs, and one with breadcrumbs. Dip each Kiev into flour, then egg, then breadcrumbs.
- Air fry the Kievs: Spray with oil and cook in the air fryer at 200°C for 15–20 minutes until golden and cooked through.
- Cook the chips: Add Green Isle Straight Cut Chips to the air fryer drawer and cook at 200°C for 15–20 minutes, shaking halfway through.
- Heat the peas: Boil the Green Isle Garden Peas in salted water for 5 minutes, or pop them into a silicone tray in the air fryer for a quick finish.
- Serve everything hot with extra garlic butter (optional) and enjoy!
