Asian Stir Fry Mix Simple Fried Rice

This dish is great to use up leftover rice, adding eggs, our Asian Stir Fry and some simple sauces can create a delicious work from home lunch or dinner the following day. Helping you avoid food waste and save money by incorporating rice into a new dish. Our Asian Stir Fry is also packed full of healthy veggies and saves you time on prepping, chopping and washing. Ingredients

4 eggs, beaten

2 tablespoons vegetable oil

400 grams Green Isle Asian Stir Fry Mix

500g  pre-cooked white rice or use leftover rice

1 teaspoon white pepper

2 tablespoons light soy sauce

1 teaspoon dark soy sauce

1 tablespoon sesame oil

3 spring onions, finely sliced

To serve:

Chilli oil

Method:  

  1. Place a large wok or frying pan over a high heat and add 1 tablespoon vegetable oil. Heat until very hot then add the beaten eggs. Cook fr 30 seconds undisturbed then begin to break up with eggs, scrambling them into large, dry chunks. Remove from the pan when cooked.
  2. Add 1 ore tablespoons vegetable oil to the wok or frying pan and add the Green Isle Asian Stir Fry and stir fry on a medium heat for 5-7 minutes. Add few drops of water to add moisture if required.
  3. Cook the rice according to the packet instructions and add to the wok, stirring constantly to mix everything together then add in the white pepper, light soy sauce, dark soy sauce, and sesame oil. Stir everything to combine then add the scrambled egg back into the pan. Leave to cook for a few minutes to warm everything through then add the spring onions and serve straight away with some chilli oil on the side.
