Blueberry American style Pancakes

Who else loves to treat themselves to some pancakes on the weekend? Our American style Blueberry pancakes are the perfect brunch-at-home weekend recipe, we like to top ours with extra blueberry compote and a dollop of natural yogurt.

Ingredients

Pancakes

120g green Isle blueberries
135g plain flour
1tsp baking powder
1/2 tsp cinnamon [optional]
2 tbsp caster sugar
130 ml milk[almond milk etc can be substituted]
1 large egg lightly beaten
2 tbsp melted butter

Compote:

1 pack of Green Isle Blueberries 300g
40g Sugar
Zest and juice of 1 orange [optional]

Method:  

  1. To make the compote, in a sauce pan on medium heat add the Blueberries and cook for 1 minute
  2. Add the sugar and the zest and juice (if using) and stir until all the sugar is dissolved. Bring the mixture to the boil for 1 minute, remove from the heat and leave to cool down.
  3. To make the pancakes, sift dry ingredients into a food processor in a jug combine the milk egg and melted butter, mix until smooth and creamy.
  4. It is at the cooking stage that the blueberries are best added.
  5. Add a small ladle full of batter to your heated pan as it start to cook and just before flipping add a spoon full of Green isle Blueberries, flip and allow to finish cooking on the opposite side. The delicious blueberries will cook when flipped.
  6. Serve pancakes with blueberry compote and Greek style yogurt.
