Blueberry and Oatmeal Cookies
With just a few ingredients you can make these delicious Blueberry and oatmeal cookies, the perfect weekend bake to enjoy with a cup of coffee or tea Perfect for batch cooking and enjoying at a later date. Ingredients
100 grams unsalted butter, softened
110 grams soft light brown sugar
1 teaspoon vanilla bean paste
1 egg
150 grams plain flour
100 grams oats
1 teaspoon baking powder
Pinch salt
100 grams Green Isle Frozen Blueberries (you can also use raspberries)
Method:
- Pre-heat the oven to 190 C / 170 C fan and line a large baking tray with greaseproof paper.
- Beat the butter and sugar together with an electric whisk until light and fluffy then add the vanilla bean paste and the egg and whisk again to combine thoroughly.
- Sieve the flour over the mixture and combine with a wooden spoon then add the oats, baking powder and a pinch of salt and stir again to combine. Add the Green Isle frozen blueberries and stir gently, only a few times, to mix them into the batter.
- Divide the dough into equal sized balls and place onto the baking tray.*Handy tip: you could freeze the cookies at this stage and simply cook from frozen, adding 5 minutes on to the cooking time.
- Cook the cookies for 12 – 15 minutes until golden brown. Remove from the oven and leave to cool on the baking tray for 5 minutes then place on a cooling rack to cool completely before enjoying.
