Cajun Spiced Corn on the Cob with Feta and Chives

Not only is this dish a crowd-pleaser, but it is also incredibly easy to make and can be prepared in less than 20 minutes. 1 packet Green Isle Corn on the Cob

1 tablespoons olive oil

1 tablespoon Cajun seasoning

Juice of 1 lime

100 grams feta cheese, crumbled

Handful of freshly chopped chives, to serve

Method:  

  1. Place the Green Isle Mini Corn Cobs into boiling water. Cover, bring back to the boil and simmer for 4 minutes then remove from the water and set aside.
  2. Place a griddle pan over a high heat or preheat your BBQ and drizzle the corn with the olive oil then rub with the Cajun seasoning.
  3. Place the corn onto the griddle pan or BBQ and cook, turning occasionally, for about 5 minutes, or until nicely golden and charred all over.
  4. Place the corn onto a serving dish and squeeze over the lime juice then crumble over the feta and sprinkle with the chives.
