1 bag Green Isle Country Veg Mix 450g
3 eggs
1 cup cottage cheese
½ cup pesto
150ml milk
1 cup ground almonds
50ml olive oil
1 cup grated Parmesan
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon garlic powder
Mixed vegetables of choice (par-boiled)
Grated mozzarella (for topping)
Method:
- Prepare the vegetables – Par-boil your Country Veg in a pot of boiling water for a few minutes until slightly tender.
- Make the cheesy mix – Meanwhile, in a large bowl whisk together the eggs, cottage cheese, pesto, milk, ground almonds, olive oil, Parmesan, and spices until well combined.
- Assemble the dish – Place the par-boiled vegetables in an ovenproof dish, spreading them out evenly. Pour the cheesy mixture over the top, ensuring everything is well coated.
- Add the finishing touch – Sprinkle a generous layer of grated mozzarella over the top for a golden, cheesy crust.
- Bake or air fry – until the top is golden and bubbly.
