Country Vegetable – Hidden Vegetable Bolognese

Looking for a clever way to sneak more veg into family meals? This Hidden Vegetable Bolognese is a nutritious twist on a classic, using Green Isle Country Mix Vegetables — a colourful trio of carrots, cauliflower and broccoli that are picked at their peak and frozen at their freshest. Packed with vitamin A and protein, and free from artificial colours, flavours, or preservatives, this veggie mix helps you to reduce food waste without sacrificing taste or nutrition. Blending the vegetables into a smooth puree means even the fussiest eaters won’t notice – they’ll just enjoy a hearty, comforting dish that’s perfect for busy weeknights.

Ingredients

  • 160g Green Isle Country Mix Vegetables
  • 350g Mince
  • 2 tsp Garlic (minced)
  • Dried Herbs, to taste
  • 1 Tin Chopped Tomatoes
  • 150ml Stock (to blend vegetables)
  • 150g Cooked Lentils
  • 4 Portions Pasta
  • Parmesan Cheese, to serve
  • Garlic Bread, to serve
  • Fresh Basil, to serve

Method:  

  1. Fry the mince in a large pan until browned.
  2. Add the garlic and dried herbs; cook for 2 minutes.
  3. Pour in the tinned tomatoes and stir.
  4. Meanwhile, blend the Green Isle Country Mix with the stock to form a smooth vegetable puree.
  5. Add the puree to the mince mixture in the pan.
  6. Stir in the cooked lentils and allow to simmer for another 8 minutes.
  7. While the sauce cooks, boil the pasta in salted water according to pack instructions.
  8. Cook garlic bread in the air fryer or oven.
  9. Serve the Bolognese over the pasta, topped with parmesan and fresh basil.
