Greek inspired Corn on the Cob

Bring a taste of the Mediterranean to your table with these Greek-Inspired Mini Corn on the Cobs. Perfect as a vibrant side dish or a flavour-packed snack, this recipe pairs Green Isle’s quick-frozen mini corn—picked at their peak and frozen at their freshest—with a creamy, herby Greek yoghurt topping, tangy feta, and a sprinkle of oregano. It’s a simple way to enjoy all the nutrition of fresh vegetables, with no waste and zero prep hassle. This dish is sure to impress at any BBQ or dinner table.

Ingredients:

  • ½ cup Greek yoghurt
  • 2 tbsp lemon juice
  • ¼ cup feta cheese, crumbled
  • 2 tsp dried oregano
  • 1 tbsp garlic powder
  • 2 tbsp fresh oregano, chopped
  • ½ red onion, finely diced
  • 1 tbsp oil
  • Salt and pepper, to taste

 

Method:  

  1. Cover the corn in oil and season with salt and pepper.
  2. Cook for 10 mins at 200*C.
  3. Turn over and cook until fully cooked.
  4. Mix the yoghurt, lemon juice, feta, dried oregano, garlic powder and spoon onto the corn.
  5. Garnish with crumbled feta, red onion and fresh oregano and serve.
