Ingredients
- Green Isle Ready Roasted Vegetables with Lightly Seasoned Potato (550g)
- Chicken breast (2 breasts, about 250g each)
- Avocado
- Hummus (3-4 tablespoons)
- Thinly sliced eed onion – Thinly sliced
- Sundried tomatoes
- Coriander or parsley (a handful)
Method:
- Cook the Roasted Vegetables:Preheat your oven or air fryer to 200°C (400°F). Place the Green Isle Ready Roasted Vegetables with Lightly Seasoned Potato in the air fryer or on a baking tray. If using the air fryer, cook for about 10 minutes, shaking halfway through. If using the oven, cook for 10-12 minutes, until the vegetables are heated through and slightly crisped.
- Cook the Chicken:Season the chicken breasts with salt, pepper, and your favourite herbs or spices. Cook thoroughly, flipping half way through.
- Assemble the Buddha Bowls:Divide the roasted vegetables evenly into 3 bowls. Top each bowl with a portion of the sliced chicken breast. Add sliced avocado to each bowl. Dollop hummus on top of the veggies and chicken. Add a few sliced red onions for a little extra crunch and flavour. Garnish with fresh coriander or parsley for a pop of colour and freshness.
