Hidden Country Mix Vegetable Sauce with Macaroni and Cheddar

No need for washing, peeling, or chopping—just grab a bag of our nutritious mix, packed with carrots, cauliflower, and broccoli. High in protein and vitamin A, it’s a simple way to boost flavour and nutrition in every bite!

Ingredients

1 bag of Green Isle Country Veg 450g

1 onion

1 courgette

1 red pepper

4 plum tomatoes

3 cloves of garlic

Macaroni (amount as desired)

Cheddar cheese (grated, to taste)

Fresh parsley (for garnish)

 

Method:  

  1. Cook the vegetables – Preheat your air fryer to 200°C. Roughly chop the onion, courgette, red pepper, and tomatoes. Peel the garlic cloves and leave them whole. Place all the vegetables in the air fryer and roast for about 10 minutes until they are soft. Meanwhile, boil your Green Isle Country Veg
  2. Cook the pasta – While the vegetables are cooking, cook the macaroni according to the packet instructions. Drain and set aside.
  3. Blend the sauce – Once cooked, transfer all the vegetables to a blender or food processor. Blend until smooth, adding a little water if needed to reach your desired consistency. Season with salt and pepper to taste.
  4. Combine and serve – Mix the blended vegetable sauce with the cooked macaroni, ensuring the pasta is well coated. Serve hot, topped with grated cheddar cheese and a sprinkle of fresh parsley for extra flavor.
  5. Refrigerate or freeze any leftover sauce for the future!Enjoy a delicious and nutritious meal packed with hidden veggies!
