Nasi Goreng Veggie Fried Rice

An easy, tasty lunch or midweek meal can be made with our Luxury Stir Fry Mix in a nasi goreng veggie fried rice. Nasi goreng is an Indonesian stir-fried rice, packed full of flavour and often served with something crunch, cold and fresh on the side. This version is vegetarian friendly and we have added an egg for some protein on the side.

1 tablespoon vegetable oil, plus 50 ml

175 grams Green Isle Luxury Stir Fry Mix

2 garlic cloves, grated

1 tablespoon kecap manis (sweet soy sauce)

1 tablespoon light soy sauce

2 teaspoons tomato puree

1 – 2 teaspoons sriracha, depending on how spicy you like your food

1 packet of cooked wholegrain rice

2 eggs

Accompaniments

¼  cucumber, thinly sliced

2 tomatoes, sliced

3 spring onions, finely sliced

Coriander leaves

Sambal oelek, or other chilli paste

Sesame seeds

Method:  

  1. Heat 1 tablespoon vegetable oil in a wok or large, deep frying pan until hot. Add the Luxury stir fry mix and cook for 3 – 4 minutes then add the garlic and stir-fry for a further minute. Add the kecap manis, light soy sauce, tomato puree and cooked rice and stir-fry over a high heat for 2 mins.
  2. For the fried eggs, place the 50 ml vegetable oil in a frying pan and heat until very hot. Crack the eggs into the hot oil and cook until done to your liking
  3. Divide the Nasi Goreng between 2 plates (a good tip here is to pack the rice into a bowl to compact and then turn out onto a plate to create a mound). Top the mounds with the fried eggs and serve with the accompaniments.
