Cauliflower Rice

Nutty Cauliflower Rice by Derval O’Rourke

This is a brilliant salad to make in bulk and set aside to use as needed. It’s really lovely on its own or with a dollop of hummus – Derval O’Rourke

Ingredients

  • 1 tsp coconut oil
  • 2 packets Cauliflower Rice
  • 1 handful sweetcorn
  • Ginger, thumb sized piece grated
  • 1 squeezed Lime
  • 2 tbsp Soy sauce
  • 1 tbsp honey
  • 4 spring onions, chopped
  • 50 g walnuts, roughly chopped
  • 1 handful fresh coriander

Method:  

  1. Add the oil to a large pan over medium heat. Add the riced cauliflower and a pinch of salt. Sauté the cauliflower for about 5 minutes. Add the sweetcorn and mix through the cauliflower.
  2. Add the ginger, soy sauce, honey and lime to the pan and mix well through the ingredients. Cook for 2 minutes and set aside on a plate to cool.
  3. Meanwhile chop the spring onions, walnuts and coriander.
  4. Toss to combine the ingredients. Serve immediately or refrigerate until ready to eat.
