Add pomegranate seeds for a pop of colour and flavour, it’s a vibrant side dish that’s as easy to make as it is delicious!

½ bag of Green Isle Frozen Garden Peas

½ cup sour cream

¼ cup mayonnaise

1 tablespoon vinegar (white wine or apple cider)

100g bacon (cooked and chopped)

½ cup feta cheese (crumbled)

1 small red onion (finely diced)

2 cup peas (fresh or thawed if frozen)

Handful of fresh parsley or basil (chopped)

¼ cup pomegranate seeds

Method:

  1. Cook the peas - Add the peas to a saucepan of boiling water. Cover, bring back to the boil and simmer for 3-4 minutes.
  2. Meanwhile, prepare the dressing – In a bowl, whisk together the sour cream, mayonnaise, and vinegar until smooth and well combined.
  3. Assemble the salad – In a large bowl, add the peas, chopped bacon, feta cheese, diced red onion, and chopped herbs. Toss gently to mix.
  4. Add the dressing – Pour the creamy dressing over the salad and stir until everything is evenly coated.
  5. Garnish and serve – Sprinkle with pomegranate seeds for a pop of colour and sweetness. Serve immediately or chill for 15 minutes to let the flavours meld. A refreshing and flavourful salad with a perfect balance of creamy, salty, and sweet!
