Ingredients
- 2 salmon darnes
- 200g Green Isle Ready Roasted Vegetables
- 2 tbsp pesto
- 1 lemon, halved
Method:
- Oven cook or air fry your salmon darnes. See manufacturer’s guidelines for best results.
- Preheat your air fryer to 200°C. Add 200g of Green Isle Ready Roasted Vegetables to the basket. Cook for 10 minutes, shaking occasionally to ensure even crispness.
- Plate the salmon alongside the roasted vegetables. Garnish with a dollop of pesto and a squeeze of fresh lemon juice. Serve immediately.
