Ingredients

  • 2 salmon darnes
  • 200g Green Isle Ready Roasted Vegetables
  • 2 tbsp pesto
  • 1 lemon, halved

Method:  

  1. Oven cook or air fry your salmon darnes. See manufacturer’s guidelines for best results.
  2. Preheat your air fryer to 200°C. Add 200g of Green Isle Ready Roasted Vegetables to the basket. Cook for 10 minutes, shaking occasionally to ensure even crispness.
  3. Plate the salmon alongside the roasted vegetables. Garnish with a dollop of pesto and a squeeze of fresh lemon juice. Serve immediately.
