Air Fryer Ready Roasted Vegetables with lightly seasoned potato and salmon

375g Green Isle Ready Roasted vegetables with lightly seasoned potato

2 salmon fillets

Olive oil

Pinch smoked paprika

Sea salt & freshly ground black pepper

Method:  

  1. Preheat air fryer to 200°C. Place 200g of vegetables in the basket. Cook for 10 minutes or until crisp and golden, shake occasionally to ensure an even cook.
  2. For the salmon, rub a little olive oil into the flesh of the salmon then season with a pinch of smoked paprika, some salt and pepper.
  3. Air fry salmon at 200°C for 6 to 11 minutes, depending on thickness and size. Always see manufacturer's guidelines for best results.
  4. Top tip: For easy clean up, line the air fryer basket with aluminium foil or parchment paper. Start the salmon skin-side down
  5. If using an oven: -Pre-heat oven to 220°C/Fan 200°C/Gas Mark 7. Spread the vegetables on a baking tray and cook for 14-18 minutes until crisp and golden. Turn the vegetables halfway through cooking. -For the salmon, rub a little olive oil into the flesh of the salmon then season with a pinch of smoked paprika, some salt and pepper. -Place the salmon into the oven for the last 10 minutes of the cook time and then serve the vegetables and salmon straight from the oven.
