Broccoli and Sausage Pasta

Ingredients
200 grams pasta
150 grams Green Isle Frozen Broccoli
2 tablespoons extra-virgin olive oil
2 tablespoons butter
1 small onion, chopped
2 garlic cloves, finely chopped
½ tsp fennel seeds
½ tsp crushed red chillies
2 Italian-style pork sausages, skins removed and meat broken into pieces
Parmesan, to serve
Basil leaves, to serve
Method:
- Bring a large pan of water to the boil and cook the pasta according to the packet instructions. Add the broccoli for the last 4 – 5 minutes then drain, saving a small amount of the water.
- Heat the oil and butter in a large frying pan and add the onion, frying for 5 minutes until soft and slightly golden. Add the garlic, fennel seeds and chillies and when they start to colour a bit, add the sausage, cooking until golden – about 5 – 6 minutes.
- Tip in the pasta and broccoli with the reserved water and toss to coat everything then serve in bowls with lots of grated parmesan and some torn basil leaves.
