Broccoli, walnut & apple salad

Another great side that works perfect for Christmas, broccoli, toasted walnuts and apple grated or chopped into matchstick shapes. This healthy recipe would also work great as a healthy lunch option.


450 grams Green Isle Broccoli Florets

75 grams walnuts

50 ml extra virgin olive oil

2 tablespoons red wine vinegar

Zest and juice of ½ a lemon

1 small shallot, very finely diced

Salt and freshly ground black pepper

2 green apples, cut into matchsticks


  1. Place the Green Isle Broccoli into boiling, salted water. Cover, bring back to the boil and simmer for 4 to 5 minutes then drain and chop into bite sized pieces.
  2. Whilst the broccoli cooks, heat a frying pan over a medium heat and add the walnuts, cooking for 3 - 4 minutes to toast. Remove from the heat and roughly chop.
  3. In a large bowl, whisk the olive oil with the vinegar, lemon juice, lemon zest and shallot and season with salt and pepper. Add the green apple matchsticks and toss to coat them in the dressing. Next, add the broccoli, toss to coat and serve sprinkled with the toasted walnuts.
