Buttered Peas & Leeks
Our buttered peas and leeks make the perfect Christmas side, ready in just 30 minutes they will take your Garden Peas to the next level and are delicious served alongside any roast of your choosing.

Ingredients
4 tablespoons butter
2 leeks, white and pale green parts only, thinly sliced
Salt and freshly ground black pepper
85 ml white wine
2 heads of Little Gem lettuce, shredded
450 grams Garden Peas
100 ml chicken or vegetable stock
2 tablespoons finely chopped chives
2 tablespoons finely chopped parsley
Zest of ½ a lemon
50 grams toasted hazelnuts, roughly chopped
Method:
- Melt butter in a large wide saucepan over medium-low heat. Add the leeks and cook stirring occasionally, for 5 minutes until tender. Season well with salt and pepper then pour in the white wine. Cook until the wine has reduced by ½ and then add the lettuce, peas, and chicken stock.
- Partially cover the pan and bring to a simmer. Cook at a gentle simmer until the lettuce and peas are tender, which should take about 5 minutes. Remove from the heat, then stir in the herbs and lemon zest. Serve scattered with the toasted hazelnuts.
