Low fat chips, eggs, ham and peas
Try our new Low Fat Chips with this retro eggs and ham dish, a perfect way of using up leftover ham after Christmas dinner or a Sunday roast. This is family dish helps you avoid food waste and you will also save time on wash up making everything in one simple tray.

Ingredients
1 bag Green Isle Healthy Low Fat Chips
1 red onion, sliced thickly
1 tablespoon olive oil
2 fresh thyme sprigs, leaves removed
100 grams Green Isle Frozen Peas
4 eggs
150 grams pulled ham hock
1 tablespoon wholegrain mustard
1 teaspoon honey
2 tablespoons parsley, chopped, to garnish
Method:
- Preheat the oven to 200 C / 180 C fan.
- Place the chips into a large non-stick roasting tin and set aside for a minute. In a small bowl toss the red onion slices, oil and thyme leaves with a good pinch of salt and then dot the onion slices around the chips in the roasting tray.
- Roast for 30 minutes then take the tin out of the oven, and sprinkle over the peas.
- Make four spaces in the tin and crack in the eggs then return the tin to the oven for 4 minutes.
- Toss the ham with the mustard and honey and after 4 minutes sprinkle the ham over the tray and return to the oven for a further 4 - 6 minutes or until the egg whites are cooked.
- Scatter the parsley over the dish and serve straight away.
