Country Vegetable – Hidden Vegetable Bolognese

Ingredients
- 160g Green Isle Country Mix Vegetables
- 350g Mince
- 2 tsp Garlic (minced)
- Dried Herbs, to taste
- 1 Tin Chopped Tomatoes
- 150ml Stock (to blend vegetables)
- 150g Cooked Lentils
- 4 Portions Pasta
- Parmesan Cheese, to serve
- Garlic Bread, to serve
- Fresh Basil, to serve
Method:
- Fry the mince in a large pan until browned.
- Add the garlic and dried herbs; cook for 2 minutes.
- Pour in the tinned tomatoes and stir.
- Meanwhile, blend the Green Isle Country Mix with the stock to form a smooth vegetable puree.
- Add the puree to the mince mixture in the pan.
- Stir in the cooked lentils and allow to simmer for another 8 minutes.
- While the sauce cooks, boil the pasta in salted water according to pack instructions.
- Cook garlic bread in the air fryer or oven.
- Serve the Bolognese over the pasta, topped with parmesan and fresh basil.
