Christmas Croquettes with Goats Cheese and Sage

Effortlessly elevate your Christmas sides this Christmas with Green Isle’s Potato Croquettes, topped with the creamy richness of goat cheese, honey, lemon and the earthy aroma of sage. Our Croquettes are suitable to cook in the air fryer or oven, making this impressive side dish quick and easy to prepare.

Ingredients

  • 1 bag Green Isle Potato Croquettes
  • 100g soft goats cheese
  • 50 – 100ml milk
  • Zest of ½ lemon
  • 50ml neutral oil
  • Good handful of sage leaves
  • 2 tbsps. runny honey
  • Sea salt
  • Freshly ground black pepper

Method:  

  1. Preheat oven to 200 C / 180 C fan. Place the Green Isle Potato Croquettes onto a baking tray and place into the oven to cook for 25 - 30 minutes until golden and piping hot throughout.
  2. Whilst the croquettes cook, place the goats cheese, 50ml milk, lemon zest and some salt and pepper into a blender and blitz until smooth. You may need to add more milk depending on your cheese so add more if necessary - you are looking for a thick creamy mixture the texture of Greek Yoghurt.
  3. Heat the oil in a small pan and fry the sage leaves, in batches, until crispy. Drain them on kitchen paper and set aside.
  4. When the croquettes are done, assemble them in your serving bowl and add spoonful's of the goats cheese mixture all over. Crumble over the sage leaves and finish with a drizzle of honey and a sprinkle of salt and pepper.
