Beef Stir Fry with Cauliflower Rice

Enjoy a tasty beef stir fry with our low carb Cauliflower Rice with mixed peppers and oyster sauce for a quick and tasty midweek meal.

Sliced Mixed Peppers 350g

300g sirloin beef, thinly sliced

1 teaspoon of cornflour

2 tablespoon of vegetable oil

1 small onion, sliced

2 cloves of garlic, sliced

5cm fresh ginger, grated

1 head of pak choi, cut in eight lengthways

1 tablespoon soy sauce

2-3 tablespoons of Oyster sauce

Method:  

  1. Place the beef strips into a bowl and mix with the cornflour.
  2. Heat 1 tablespoon of the oil in a hot pan and stir fry the beef for 2-3 minutes until cooked through and browned. Remove from the pan and add the rest of the oil.
  3. Fry the onions, garlic and ginger for 1 minute. Add the peppers and continue to fry for another 2-3 minutes on high. Add the pak choi, fry for another couple of minutes then add back in the beef.
  4. Reduce the heat, add the soy sauce and oyster sauce and cook for another 1-2 minutes. Cook Cauliflower Rice as per on pack instructions.
