Potato Wedges with Sour Cream and Spring Onion Dip

1 bag Green Isle Potato Wedges

6 spring onions

200g sour cream

100g mayonnaise

Zest of 1 lime

1 garlic clove, crushed

½ tsp onion powder

Sea salt

Freshly ground black pepper

  1. Preheat oven to 200 C / 180 C fan. Place the wedges onto a baking tray and place into the oven to cook for 25 minutes, until golden and piping hot throughout. Our wedges are also suitable for the air fryer, see manufacturer's guidelines for best results.
  2. For the dip, place4 of the spring onions into a food processor and pulse until broken down slightly. Add the sour cream, mayonnaise, lime zest, garlic, onion powder and some salt and pepper and pulse again to just combine. Place into a serving bowl and set aside.
  3. Finely slice the remaining spring onions.
  4. When the wedges are cooked place into a serving bowl and sprinkle with the sliced spring onions. Serve the dip alongside.
