Crispy Potato Cubes topped with Greek salad
Looking for simple summer sides the whole family will enjoy? Our Crispy Potato Cubes are ready in just 15-20 minutes in the oven and work great topped with a fresh and colourful Greek salad. this works great with BBQ’d meats or veggies of your choice.

Ingredients
1 bag Green Isle Crispy Potato Cubes
½ cucumber, thinly sliced
½ red onion, thinly sliced
150 grams cherry tomatoes, halved
30 grams black olives, chopped
Zest of ½ a lemon
1 teaspoon dried oregano
50 ml olive oil
Salt and pepper, to taste
100 grams feta cheese, broken into large pieces
Method:
- Pre-heat your oven to 220 C / 220 C fan / Gas Mark 6. Place the Green Isle Crispy Potato Cubes on a lined tray and place into the oven for 15 – 20 minutes, turning once throughout cooking.
- Whilst the Crispy Potato Cubes cook, make the Greek Salad by mixing together the cucumber, red onion, cherry tomatoes, olives, lemon zest, oregano, olive oil and a pinch of salt and pepper in a mixing bowl.
- When the potato cubes are cooked, divide between 2 bowls and top each with half of the salad. Place half of the feta on top of each bowl and enjoy!
