Duck Fat Roast Potatoes with Beurre Noisette, Rosemary, and Parmesan

Pair them with nutty beurre noisette, fragrant rosemary, and a shower of freshly grated parmesan to create a dish that’s the perfect centrepiece for your Sunday roast or any special occasion. Potato perfection, elevated!

Ingredients

  • 1 pack Green Isle Duck Fat Roast Potatoes
  • 150g unsalted butter
  • 1 sprig fresh rosemary, finely chopped
  • Parmesan cheese, grated to taste

Method:  

  1. Preheat the air fryer to 200°C. Place 200g of roast potatoes in the basket. Cook for 16 minutes or until crisp and golden, shake occasionally to ensure an even cook. If using an oven: Pre-heat oven to 220°C/Fan 200°C/Gas mark 7.Spread the roast potatoes on a baking tray and cook for 35-38 minutes until crisp and golden. Turn the potatoes halfway through cooking.
  2. Melt 150g butter on the pan on a medium heat, watch it and let it turn to a golden colour, take from the heat and add chopped rosemary to it.
  3. Toss your cooked potatoes in it. Finely grate parmesan over the dish of potatoes.
  4. Serve immediately and savour every bite of this rich, flavourful side dish!
