Green Bean Salad
Get more veggies on to your plate by elevating your everyday green beans with some lemon, toasted almonds and a little chilli for an extra kick. Ready in less than 10 minutes, this is a vegan friendly recipe but pairs well with grilled meat or fish. Toasted sunflower seeds would also work great should you wish to make it nut free. Ingredients
2 tablespoons of olive oil
1 medium onion, finely chopped
1 red chilli, finely chopped
450g Green Isle Sliced Green Beans
Zest and juice of ½ a lemon
Salt and pepper
50g toasted almond flakes
Method:
- Heat a pan over a medium heat and add 1 tablespoon of olive oil.
- Sauté the onion and chilli gently for 2-3 minutes until soft but not coloured.
- Add the frozen beans and cook for 5-7 minutes until the beans are cooked through and there is no liquid in the pan.
- Remove from the heat and add 1 tablespoon of olive oil, lemon zest and juice, salt and pepper and flaked almonds.
- Toss together well and serve hot or at room temperature with grilled meats or fish.
