Ingredients

  • 2 large potatoes
  • 1 pack Green Isle Country Mix Vegetables
  • Handful of grated Parmesan (choose vegetarian hard cheese alternative if preferred)

Method:  

  1. Peel and chop the potatoes into chunks. Boil for about 10 minutes, or until soft enough to mash.
  2. In a separate pot, boil the Green Isle Country Mix Vegetables for 4-5 minutes until tender.
  3. Once both the potatoes and veggies are cooked, mash them together until smooth and well-combined.
  4. Stir in a handful of grated Parmesan to add a cheesy flavour that your kids will love.
  5. Shape the mashed mixture into little tot-sized portions, perfect for tiny hands.
  6. Air fry the tots until golden and crispy on the outside. Alternatively, you can freeze the shaped tots and air fry them when ready to eat. These veggie tots are not only a fun way to get your kids eating their veggies, but they’re also quick and easy to make! Give them a try and watch the whole family enjoy a tasty, nutritious treat.
