Ingredients
1 bag Green Isle Skinny Chips
100 grams garlic sauce
For the avocado dip:
3 Avocados, peeled and destoned
2 spring onions, roughly sliced
Juice of 1 lime
1 garlic clove, roughly sliced
Large handful coriander leaves
100 grams natural yoghurt
Salt and freshly ground black pepper
For the salsa:
100 grams Tomatoes, finely diced
Handful Coriander, finely chopped
2 Spring onions, finely sliced
Method:
- Preheat oven to 200 C / 180 C fan. Cook Green Isle Skinny Chips for 20 - 25 minutes until cooked through and golden.
- To make the dip, place the avocadoes, spring onions, lime juice, garlic clove and coriander into a food processor and blend until completely smooth. Stir through the yoghurt, place into a serving bowl and smooth the top. Using the garlic sauce pipelines out from the middle of the bowl and then pipe concentric circles from the middle out to form a spiders web on the top of the dip.
- Mix the salsa ingredients together in a bowl, season with salt and pepper and then spoon around the edge of the serving bowl. Serve with the cooked chips.
