Green Isle Garden Pea Soup

This warming Pea Soup, made with Green Isle’s Garden Peas, is a cosy, nutrient-rich dish that’s quick and easy to prepare. Green Isle Garden Peas are picked at their peak and frozen fresh to retain their naturally sweet flavour and high fibre content, adding vibrant colour and wholesome goodness to every spoonful. The soup’s velvety blend of peas, potatoes, and herbs is perfectly complemented by crispy pancetta and a swirl of cream, making it ideal for a comforting midweek meal or a delicious starter.

Ingredients

350g pack Green Isle Garden Peas

2 Onions

2 Potatoes

3x Garlic cloves

Thyme

200ml x Chicken stock – add depending on consistency preferred

Cream to garnish

Oil

Pepper

200g Pancetta lardons to garnish (optional)

Method:  

  1. Sauté the onion and garlic together.
  2. Once softened, add the potato.
  3. Add the chicken stock and allow the vegetables to cook completely.
  4. Add the thyme leaves.
  5. Add the peas and cover with water.
  6. Cook for 3-4 minutes.
  7. Blend it all together until smooth and creamy.
  8. Serve in a bowl with crispy bacon lardons, fresh cream and a drizzle of olive oil.
