Tex-Mex Cauliflower Rice & Beans

Ingredients
1 x bag Green Isle Cauliflower Rice
1 x bag Green Isle Asian Stir-Fry Mix
3 tablespoons olive oil
3 garlic cloves, chopped
2 spring onions, chopped
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon smoked paprika
2 tomatoes, chopped
1 x 400 gram tin black beans, drained
1 bunch coriander, leaves only, chopped
Method:
- Cook cauliflower rice according to packet instructions, drain well and transfer to a large bowl.
- Add Asian Stir-Fry Mix and oil to a large frying pan and cook for 5 minutes, stir in the garlic and cook for 2 minutes then add the spices, tomatoes and beans. Cook for 10 minutes until everything piping hot throughout and the tomatoes have broken down.
- Stir through the cauliflower rice to heat and then finally, stir through the coriander.
