Tex-Mex Cauliflower Rice & Beans

Looking for a light and healthy dinner that you can make in less than 30 minutes? Why not try our Asian Stir Fry Mix in this Tex-Mex style recipe with Cauliflower Rice. This veggie alternative uses the classic Tex-Mex uses Mexican style spices and herbs including cumin, garlic, smoked paprika and fresh coriander. This recipe is both vegan friendly and gluten free making it perfect for everyone, you can add some grated cheese for extra flavour but this is optional.

Ingredients

1 x bag Green Isle Cauliflower Rice

1 x bag Green Isle Asian Stir-Fry Mix

3 tablespoons olive oil

3 garlic cloves, chopped

2 spring onions, chopped

1 teaspoon cumin

1 teaspoon coriander

1 teaspoon smoked paprika

2 tomatoes, chopped

1 x 400 gram tin black beans, drained

1 bunch coriander, leaves only, chopped

Method:  

  1. Cook cauliflower rice according to packet instructions, drain well and transfer to a large bowl.
  2. Add Asian Stir-Fry Mix and oil to a large frying pan and cook for 5 minutes, stir in the garlic and cook for 2 minutes then add the spices, tomatoes and beans. Cook for 10 minutes until everything piping hot throughout and the tomatoes have broken down.
  3. Stir through the cauliflower rice to heat and then finally, stir through the coriander.
