Green Isle Sweetcorn Pasta Salad

This flavour-packed pasta salad is made with Green Isle’s frozen sweetcorn, picked at their peak and frozen at their freshest to lock in flavour and nutrition. Tossed with jalapeños, coriander, and a smoky, creamy lime dressing, this dish is a vibrant side or satisfying lunch option. Whether you’re prepping for a picnic, BBQ, or busy week ahead, this no-waste, nutrient-rich salad delivers big on taste and convenience.

Ingredients:

  • 250g Green Isle Frozen Sweetcorn
  • 400g pasta
  • 3 spring onions, finely sliced
  • 1 shallot, finely diced
  • 2 jalapeños, finely diced
  • A handful of fresh coriander, chopped
  • 1 cup grated parmesan
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 3 cloves garlic, minced
  • Juice and zest of 1 lime
  • 1 tsp smoked paprika
  • 1 tsp chilli powder
  • 1 tsp salt and pepper (or to taste)

Method:  

  1. Pan fry the corn in olive oil.
  2. Cook the pasta until al dente, strain and drizzle with olive oil and set to the side to cool.
  3. To make the dressing, mix the sour cream, mayonnaise, garlic, juice and zest of lime, smoked paprika, chilli powder and salt and pepper.
  4. Build the salad by adding the pasta, sweetcorn, spring onion, shallot, jalapeno, fresh coriander and parmesan to the bowl.
  5. Add the dressing, top with fresh coriander and more parmesan.
  6. Serve.
