Green Isle Sweetcorn Pasta Salad
This flavour-packed pasta salad is made with Green Isle’s frozen sweetcorn, picked at their peak and frozen at their freshest to lock in flavour and nutrition. Tossed with jalapeños, coriander, and a smoky, creamy lime dressing, this dish is a vibrant side or satisfying lunch option. Ingredients:
- 250g Green Isle Frozen Sweetcorn
- 400g pasta
- 3 spring onions, finely sliced
- 1 shallot, finely diced
- 2 jalapeños, finely diced
- A handful of fresh coriander, chopped
- 1 cup grated parmesan
- 1 cup sour cream
- ½ cup mayonnaise
- 3 cloves garlic, minced
- Juice and zest of 1 lime
- 1 tsp smoked paprika
- 1 tsp chilli powder
- 1 tsp salt and pepper (or to taste)
Method:
- Pan fry the corn in olive oil.
- Cook the pasta until al dente, strain and drizzle with olive oil and set to the side to cool.
- To make the dressing, mix the sour cream, mayonnaise, garlic, juice and zest of lime, smoked paprika, chilli powder and salt and pepper.
- Build the salad by adding the pasta, sweetcorn, spring onion, shallot, jalapeno, fresh coriander and parmesan to the bowl.
- Add the dressing, top with fresh coriander and more parmesan.
- Serve.
