Halloween Tortilla Bats with Garden Pea Dip & Sweetcorn Salsa
Getting more veggies into family meals doesn’t have to be a challenge — and this recipe proves it! These Halloween-shaped tortilla bats with a Green Isle Garden Pea Dip are fun to make, delicious to eat, and a brilliant way for kids to enjoy their greens. Our peas are picked at their peak, frozen at their freshest, and are a source of folic acid and fibre — all the nutrition of fresh vegetables, made easy.

Ingredients
For the Garden Pea Dip
· 450 g Green Isle Garden Peas
· 9 g fresh mint leaves
· 2 tbsp tahini
· 3 tbsp lemon juice
· Zest of 1 lemon
· 1½ tsp salt (or to taste)
For the Sweetcorn Salsa
· 1 small tin sweetcorn
· ½ red pepper, diced
· 2 spring onions, chopped
· 4 sundried tomatoes, finely chopped
· 200 g black beans, drained and rinsed
· ½ tsp cumin
· ½ tsp ground coriander
· ½ tsp smoked paprika
· A handful of fresh coriander, chopped
For the Tortilla Bats
· Tortilla wraps
· Olive oil, for brushing
· Halloween-shaped cutters (bats, pumpkins, ghosts — whatever you like!)
Method:
- To make the Garden Pea Dip: 1. Cook the peas: Bring a pot of water to the boil, add the Green Isle Garden Peas, and cook for 4 minutes. Drain and rinse under cold water. 2. Blend the dip: Add the cooked peas, mint, tahini, lemon juice, lemon zest, and salt to a blender. 3. Blend until smooth: Adjust seasoning or lemon to taste. Serve chilled or at room temperature.
- To make the Sweetcorn Salsa: 1. In a bowl, combine sweetcorn, red pepper, spring onions, sundried tomatoes, and black beans. 2. Add the cumin, ground coriander, and smoked paprika. 3. Mix well and finish with fresh chopped coriander. Set aside.
- To make the Tortilla Bats: 1. Cut out shapes: Lay the tortilla wraps flat and use Halloween cutters to create fun bat (or spooky!) shapes. 2. Brush and bake: Lightly brush each shape with olive oil and place on a lined baking tray. 3. Bake: Cook in a preheated oven at 200°C for 4–5 minutes, or until crisp and golden. 4. Serve: Pair the warm, crispy tortilla bats with the Garden Pea Dip and Sweetcorn Salsa for a fun, veggie-packed snack the whole family will enjoy.
