Sausage Ragu with Green Isle Spicy Wedges
Midweek dinners don’t have to be complicated — especially when you’ve got Green Isle Spicy Wedges on hand. Crispy, golden, and full of flavour, they’re the perfect base for this hearty sausage ragu. Simple, delicious, and guaranteed to please everyone at the table, this dish makes midweek meals easy — and seriously tasty.

Ingredients
- 200 g sausage meat
- 150 g diced bacon (or 4 rashers, chopped)
- 1 bag Green Isle Spicy Wedges
- 1 tbsp olive oil
- 1 tsp chilli flakes
- 2 garlic cloves, crushed
- 1 tbsp tomato purée
- 400 g tin chopped tomatoes
- 1 tbsp oregano
- 1 tbsp mixed herbs
- 200 ml beef stock
- Fresh basil leaves, to garnish
- Grated parmesan, to serve
Method:
- Cook the wedges: Preheat your air fryer to 200°C. Place 200–250g of Green Isle Spicy Wedges in the basket and cook for approx. 15 minutes, shaking halfway through, until crisp and golden. (Cooking times may vary, see manufacturer's guidelines for best results.
- To cook the sausage, heat olive oil in a large non-stick pan over medium heat. Add the sausage meat, breaking it up with a spoon, and cook for 5–6 minutes until browned.
- Stir in the diced bacon and cook for another 3–4 minutes until golden and crisp.
- Stir in the crushed garlic, chilli flakes, and tomato purée. Cook for 1–2 minutes until fragrant.
- Pour in the chopped tomatoes, oregano, mixed herbs, and beef stock. Stir well, reduce the heat, and let simmer for 6–8 minutes, until thickened slightly.
- Spoon the rich sausage ragu over the crispy Green Isle Spicy Wedges.
- Finish with a sprinkle of grated parmesan and a few fresh basil leaves. Serve immediately — comfort food made simple!
