One Pot Chicken and Straight Cut Chips

Pair them with this simple One Pot Chicken & Chips recipe for a comforting meal everyone will love. It’s quick to prep, full of flavour, and guaranteed to be a hit around the table.

Ingredients

  • 1 pack Green Isle Straight Cut Chips
  • ¼ tsp chilli powder
  • ½ tsp paprika
  • ½ tsp garlic granules
  • ½ tsp onion granules
  • 1 tsp chicken seasoning
  • 1 tsp mixed herbs
  • ½ tsp chilli flakes
  • 2 chicken breasts (or strips), sliced
  • 2 garlic cloves, crushed
  • 1 onion, diced
  • 1 red pepper, chopped
  • 1 tbsp sriracha
  • 1 tbsp ketchup
  • 1 tsp soy sauce
  • A pinch of black pepper
  • 1 handful grated cheese
  • A few sprigs fresh coriander, chopped

Method:  

  1. Preheat the air fryer: Set to 200°C and cook 200g of Green Isle Straight Cut Chips for 10–12 minutes, shaking halfway through until crisp and golden.
  2. Season the chicken: In a bowl, combine the chicken strips with chilli powder, paprika, garlic granules, onion granules, chicken seasoning, mixed herbs, and chilli flakes. Toss to coat evenly.
  3. Cook the chicken: In a large non-stick pan over medium heat, sauté the seasoned chicken for 5–7 minutes until lightly browned. Add the crushed garlic and cook for 1 minute.
  4. Add the vegetables: Stir in the diced onion and chopped red pepper. Cook for 2–3 minutes until softened.
  5. Make the sauce: Add sriracha, ketchup, and soy sauce. Stir well to coat everything in the sauce and season with black pepper.
  6. Combine with chips: Once the chips are cooked, add them to the pan and toss gently so they’re coated in the sauce and mixed with the chicken and veggies.
  7. Finish and serve: Sprinkle over grated cheese and chopped coriander. Serve hot — the perfect all-in-one meal for busy weeknights.
