One Pot Chicken and Straight Cut Chips

Ingredients
- 1 pack Green Isle Straight Cut Chips
- ¼ tsp chilli powder
- ½ tsp paprika
- ½ tsp garlic granules
- ½ tsp onion granules
- 1 tsp chicken seasoning
- 1 tsp mixed herbs
- ½ tsp chilli flakes
- 2 chicken breasts (or strips), sliced
- 2 garlic cloves, crushed
- 1 onion, diced
- 1 red pepper, chopped
- 1 tbsp sriracha
- 1 tbsp ketchup
- 1 tsp soy sauce
- A pinch of black pepper
- 1 handful grated cheese
- A few sprigs fresh coriander, chopped
Method:
- Preheat the air fryer: Set to 200°C and cook 200g of Green Isle Straight Cut Chips for 10–12 minutes, shaking halfway through until crisp and golden.
- Season the chicken: In a bowl, combine the chicken strips with chilli powder, paprika, garlic granules, onion granules, chicken seasoning, mixed herbs, and chilli flakes. Toss to coat evenly.
- Cook the chicken: In a large non-stick pan over medium heat, sauté the seasoned chicken for 5–7 minutes until lightly browned. Add the crushed garlic and cook for 1 minute.
- Add the vegetables: Stir in the diced onion and chopped red pepper. Cook for 2–3 minutes until softened.
- Make the sauce: Add sriracha, ketchup, and soy sauce. Stir well to coat everything in the sauce and season with black pepper.
- Combine with chips: Once the chips are cooked, add them to the pan and toss gently so they’re coated in the sauce and mixed with the chicken and veggies.
- Finish and serve: Sprinkle over grated cheese and chopped coriander. Serve hot — the perfect all-in-one meal for busy weeknights.
