Low Fat Chips with a Spring Vegetable Salsa
Low Fat Chips tossed with a spring vegetable salsa of spring onions, feta, dill, courgette and radish

Ingredients
1 x bag Green Isle Low Fat Chips
For the salsa:
3 baby courgettes, peeled thinly into long strips with a peeler
3 spring onions, thinly sliced
150 grams feta
5 radishes, thinly sliced on a mandoline
1 bunch dill
3 tablespoons olive oil
Juice of ½ a lemon
Salt and freshly ground black pepper
Method:
- Cook the chips as per packet instructions, they work great in airfryers.
- While the chips cook, toss all the salsa ingredients together with the oil, lemon, salt and pepper.
- Once the chips are cooked, place in a serving dish and add your tasty green salsa on top.
- Serve immediately and enjoy!
