Luxury Stir Fry with Prawns in a Peanut Sauce

Trying to plan quick dinners or lunches? Ingredients

4 egg noodle nests
1 tablespoon vegetable oil
200 grams raw king prawns
Thumb sized piece of ginger, finely sliced
2 garlic cloves, finely sliced
1 red chilli, finely sliced
2 spring onions, finely sliced
1 bag Green Isle Luxury Stir Fry
Handful peanuts, roughly chopped
Coriander leaves, to garnish

For the peanut sauce:

6 tablespoons crunchy peanut butter
2 tablespoons fish sauce
3 tablespoons honey
3 tablespoons soy sauce
2 tablespoons sesame oil
1 tablespoon white wine vinegar

Method:  

  1. Start by mixing the ingredients for the peanut sauce together in a bowl until well combined - this may take a few minutes to bear with it - it will come together into a glossy sauce!
  2. Cook the egg noodles according to the packet instructions then drain and set aside.
  3. Now, heat the oil in a wok set over a medium heat and, once hot, add the prawns. Stir fry for a couple of minutes, until they turn pink and then remove from the wok with a slotted spoon and place into a bowl.
  4. Add the ginger, garlic, chilli and spring onion to the wok and stir fry for 30 seconds, until they just start to become fragrant then add the Green Isle Luxury Stir fry and stir fry for 5 minutes, until the veg has thawed and is heated throughout.
  5. Add the prawns back into the wok, along with the noodles and most of the peanut sauce.
