Meal Prep Vegetable Burrito Bowls with Cauliflower Rice

Meal prep made simple with our vegetable burrito bowls with Cauliflower Rice. This recipe is perfect for making in advance, once you’re ready to enjoy simply microwave our Cauliflower Rice (which only takes 3 minutes) and add sour cream and chipotle sauce to serve.


1 x 400 gram tin black beans, drained and rinsed
150 grams Green Isle frozen sweetcorn
8 radishes, thinly sliced on a mandoline
4 packets Green Isle Cauliflower rice
2 avocados
Sour cream (or vegan alternative)
Chipotle hot sauce


  1. Divide the cherry tomatoes, black beans and radishes between 4 lunchboxes or Tupperware.
  2. Bring a pot of water to the boil and cook the Green Isle frozen sweetcorn for 4 minutes then drain, allow to cool and divide between the lunchboxes.
  3. Place these into the fridge until needed.
  4. To assemble the burrito bowl, microwave the Green Isle Cauliflower rice for 3 minutes. Whilst the rice is cooking, chop ½an avocado and add to the lunch box along with a tablespoon of sour cream and some chipotle hot sauce, if desired.
  5. Once the rice has cooked, serve alongside the pre-prepared vegetables and enjoy.
