Monster Mixed Berry Smoothie

Get your kids excited for Halloween with our Monster Berry Smoothie recipe, filled with our Mixed Berries, coconut milk and oats, this works perfectly for breakfast, a midday sweet treat or serve at Halloween parties. Note you will need to place your tin of coconut milk in the fridge overnight to give you monster a spooky little head.

Ingredients

1 tin full fat coconut milk

375 grams Green Isle Frozen Mixed Berries

300 grams natural yoghurt, or vegan alternative

1 tablespoon honey

50 grams oats

8 mini marshmallows

A food safe black pen (you can buy these in the baking section)

Method:  

  1. Place the tin of coconut milk in the fridge the night before you want to make the smoothies.
  2. In the morning, open the tin of coconut milk and with a spoon take the cream off the top of the tin and place into a bowl. With a hand whisk, whip up the coconut cream to a smooth, light consistency then place back into the fridge to hold.
  3. Place the liquid left in the bottom of the tin of coconut milk into the jug of a high speed blender and add the Green Isle Mixed frozen berries, yoghurt, honey and oats.
  4. Blitz everything together to a smooth consistency then divide between 4 glasses.
  5. Draw circles in the middle of the round ends of the mini marshmallows with the food safe pen and set aside then remove the whipped coconut cream from the fridge and using a spoon, divide it between the top of the glasses of smoothie - trying your best to make it look like a monster's head(!).
  6. Add 2 of the marshmallow ‘eyes’ to each coconut cream splodge and serve immediately.
