Ingredients

  • 2 Chicken breasts
  • Plain flour (for dusting the chicken)
  • Olive oil (for frying)
  • 2 cloves garlic, minced
  • 2 tbsp tomato puree
  • 200g sun-dried tomatoes, chopped
  • 1 tsp paprika
  • 150ml double cream
  • 200ml chicken stock
  • Grated Parmesan (to taste)
  • Small bunch fresh basil
  • Seasoning: salt, pepper, and dried oregano
  • Tagliatelle pasta (or pasta of choice)
  • 1 pack of Green Isle Broccoli Florets

Method:  

  1. Place the plain flour in a shallow bowl. Lightly dust the chicken breasts with the flour, ensuring they're coated evenly.
  2. Heat olive oil in a pan over medium heat. Add the chicken breasts and fry until golden on both sides. Once cooked through, remove from the pan and set aside.
  3. In the same pan, add a little more oil if needed, then sauté the minced garlic for about 1 minute until fragrant.
  4. Stir in the tomato puree and cook for 2 minutes, letting the flavours develop.
  5. Add the chopped sun-dried tomatoes and dried oregano. Stir everything together.
  6. Pour in the chicken stock, bringing the mixture to a gentle simmer. Let it cook for about 5 minutes to reduce slightly.
  7. Stir in the double cream and let the sauce thicken slightly
  8. Add the chicken breasts back into the pan, spooning some of the sauce over the top. Let it simmer for another 10 minutes or until the chicken is fully cooked through.
  9. Meanwhile, cook your pasta in a large pot of salted boiling water for 7-10 minutes, or according to package instructions.
  10. With about 5 minutes left in the pasta's cooking time, add the Green Isle Broccoli Florets to the pot. This will give the broccoli time to cook while keeping its vibrant colour and nutritional benefits intact.
  11. Once the chicken is cooked, remove it from the heat. Stir in fresh basil leaves and season with salt and pepper to taste.
  12. Drain the pasta and broccoli, then plate up with the chicken and creamy sauce. Finish with a generous sprinkle of grated Parmesan.
