Mexican Corn on the Cob
If you haven’t tried Mexican Corn on the Cob, you’re missing out. This flavour-packed street food favourite is made easy with Green Isle’s Mini Corn on the Cob — picked at their peak and frozen at their freshest to lock in all the natural goodness. Air-fried and topped with zesty lime-chili mayo, crumbly cheese, and fresh coriander, it’s the perfect side or snack that’s big on flavour and low on fuss.

Ingredients:
- 5 x Green Isle Mini Corn on the Cob
- ⅓ cup Mayonnaise
- ½ Lime
- ½ tsp Chili powder
- ½ cup Cotija cheese (or parmesan if cotija unavailable)
- Fresh coriander to taste
Method:
- Brush the corn with oil
- Air fry for 15–20 minutes
- Mix the mayonnaise, chili powder, and lime juice in a bowl
- Once cooled, insert a skewer into the corn and brush with mayo mix
- Roll in finely grated cheese
- Sprinkle with coriander
