Mexican Corn on the Cob

If you haven’t tried Mexican Corn on the Cob, you’re missing out. This flavour-packed street food favourite is made easy with Green Isle’s Mini Corn on the Cob — picked at their peak and frozen at their freshest to lock in all the natural goodness. Air-fried and topped with zesty lime-chili mayo, crumbly cheese, and fresh coriander, it’s the perfect side or snack that’s big on flavour and low on fuss.

Ingredients:

  • 5 x Green Isle Mini Corn on the Cob
  • ⅓ cup  Mayonnaise
  • ½ Lime
  • ½ tsp Chili powder
  • ½ cup  Cotija cheese (or parmesan if cotija unavailable)
  • Fresh coriander to taste

Method:  

  1. Brush the corn with oil
  2. Air fry for 15–20 minutes
  3. Mix the mayonnaise, chili powder, and lime juice in a bowl
  4. Once cooled, insert a skewer into the corn and brush with mayo mix
  5. Roll in finely grated cheese
  6. Sprinkle with coriander
