Ready Roasted Vegetable Salad

Fresh, bold, and full of flavour—this roasted vegetable salad made with Green Isle Ready Roasted Vegetables is the perfect balance of sweet, savoury, and zesty. Tossed with rocket, feta, and pomegranate seeds, and finished with a simple tahini-honey dressing, it’s ideal as a light lunch or a colourful side.

Ingredients:

  • 200g Green Isle Ready Roasted Vegetables
  • 1 tbsp tahini
  • 1 tbsp honey
  • 2 tsp lemon juice
  • Salt & pepper to taste
  • 1 handful rocket
  • 1 tbsp capers
  • Pomegranate seeds (to garnish)
  • Feta cheese, crumbled

Method:  Method:

  1. Preheat the air fryer to 200°C. Add the Green Isle Ready Roasted Vegetables and cook for 15 minutes, turning halfway through.
  2. While the vegetables cook, whisk together the tahini, honey, lemon juice, salt, and pepper to create the dressing. Set aside.
  3. Once the vegetables are ready, assemble the salad: layer rocket on a plate or bowl, then add the roasted vegetables, capers, crumbled feta, and pomegranate seeds.
  4. Drizzle with the tahini-honey dressing and serve immediately.
